Happy Friday everyone!  You ever have one of those weeks where Friday afternoon feels like hitting the tape after running a race?  That’s where I’m at today.  We had a great week, but holy cow…I’m ready to tuck in with my little family and have a relaxing weekend.  What goes better with a relaxing weekend than a yummy baked chicken?

Ingredients:

3-4 lb. whole chicken, cleaned out and rinsed (raw, not frozen)

1 apple, cored and cut into wedges

1 white onion, cut into wedges

5-6 washed and cut raw potatoes ( I leave the skin on)

2 c. of carrots

one can of chicken broth (or make your own with a bullion cube), can easily use gluten free brand here if diet requires

garlic salt

black pepper

Directions:

Core the apple and cut it and the onion into wedges.

Place them inside the cleaned out chicken.  Place chicken on a rack inside a roasting pan.  Lay the cut potatoes and carrots around the rack inside the pan and cover with the chicken broth.

Sprinkle garlic salt and black pepper on top of chicken and veggies to your taste.

Bake at 350 degrees for 2 hours.  Check temp of chicken to be sure it is thoroughly cooked before eating.
