pumpkin muffins

It seems like my calendar has gone “potluck get-together” crazy lately.  It’s a good problem to have, but sometimes it can be hard to come up with good dishes to share.  Enter the easiest recipe ever originally shared with me by my mother-in-law who saw it on facebook.

Ingredients (makes about 12 muffins, depending on their size):

-one box of extra moist yellow cake mix

-one small can of pumpkin

That’s it.  Seriously.

Mix the cake mix and pumpkin together and pour into a muffin pan.  I used cupcake liners for easier clean-up.  Bake at 350 degrees for 20-25 minutes until golden brown and springy to the touch.  That’s it.  I’m not gonna lie, the first time I made them I had two for breakfast.  Enjoy!
